If DH doesn't like anything spicy or fishy, I would stay away from all 3 of the places you listed. Flying Fish has almost all fish/seafood on their menu. BOMA and JIKO are both African inspired and while the food does not have many of the typical spicy flavors you may be used to, most of the dishes do have unique spices.
What are these places like? Flying Fish has an open kitchen area and it's pretty busy/noisy place if its crowded. BOMA is a buffet set up like an African marketplace with various stations, meat station, soup station, dessert station, etc. It can be very noisy here if it's busy as the tables are pretty close. JIKO is an unscale dining experience, mostly adult clientele. Restaurant is dark with changing colored lights. This place is known for its extensive African wine collection.
Hope this helps. We'll be there again in May too--didn't get enough Disney last month while we were there.
