Restaurant/? Ideas for mom

So I am at a complete loss of what to get my mom for christmas. I had 2 ideas, but they both fell through (one she bought herself and the other I just cannot find anywhere). Today, though, I realized that we will be going to WDW in a couple months. My little brother will be marching in the parade there so my mom and I are going for like 3 or 4 days. We aren't sure if my dad is going or not yet. I was thinking maybe getting her a Disney gift card for Christmas and making an ADR for 2 at some restaurant (if it's me and her then we do a girl's dinner or if my dad goes, they can go together and I can go off by myself, either way everybody's happy!). We are usually doing the same restaurants every trip and it's usually quick-serve or something fast and relatively inexpensive. My first thought was Victoria and Albert's (that's something she would never splurge on for herself), but since we are only going for a couple days, we are probably bringing carry-ons on the plane and and extra "nice" outfit probably won't be something we want to bring. I've been trying to think of something good all day, but I'm at a loss.
Any ideas? Like I said, nothing too fancy that she would need to bring a special outfit for and it does need to be on property (no rental car). Also, preferably nothing in the parks. Since we only have a couple days in the parks I really don't want to waste that sitting in a restaurant. If there's something especially spectacular in the parks that you think of, though, please feel free to post it. I've been to WDW so many times, I can't believe I can't think of anything good. And, if there's something to do that may not be a restaurant (for example, we got my dad a Richard Petty Driving experience gift certificate last time we went) please feel free to share. She isn't very adventurous, though, which is why I thought dinner/lunch may be better. Thanks!!!
 
T-rex Cafe in DTD, we took my wife's parent's and grandmother (87) last year when they 1st opened they thought it was great! Good food , not too expensive and fun for all!
 

What about treating her to a pedicure at home before your trip? It's probably expensive to have one in WDW, but a nice afternoon at a salon near home a day or two before you leave might be a nice break for her.
