Akershus is my favorite EPCOT restaurant, but I like interesting foods, and the buffet there has loads of them. There's a hot and cold bar; the latter has breads and cheeses (including a really interesting cheese that looks like sliced peanut butter, and tastes like a cross between the two), salmon and herring prepared in many different ways, salads, etc. The hot bar has a number of meat and vegetable dishes, including a really tasty mashed root casserole of some kind. Don't know what it is, but it's great. As I remember they have some low-budget desserts (fruit, pudding, etc.) as part of the buffet, and if you pay extra you can get a more elaborate dessert. The buffet is a set price per person/child, and drinks are extra. (I love Ringnes beer, but it tends to fill you up, so I usually drink water, but treat myself to an Aquivit after dinner, kind of a Norwegian version of Jagermeister. It's supposed to settle the stomach. Whatever, it tastes like licorice for adults.)
The staff has always been friendly there; and it's easy to get around to the buffet line, but other than the authentic uniforms of the staff and the relatively interesting decor, there's really no attraction for kids, other than the fact that you're likely to find something they'll like to eat among the many selections at the buffet.
Try it; I think you'll like it, especially if you're more hungry than usual.
