To guarantee you will get three sleeping surfaces at a deluxe, I would consider one of the monorail resorts - GF, Poly and CR. You would get 2 queens and a daybed in a room at any of these resorts. I find the daybed to be quite comfortable. BC, YC and BWI also have rooms with daybeds, but they aren't guaranteed. Of the three monorail resorts, I prefer GF - I like the variety of restaurants and transportation options. Poly would be my second choice, but I find it a bit loud and chaotic - the theming is great! Poly and GF are also walking distance to each other so you can very easily visit those resorts to go to the various restaurants and lounges. CR would be my last choice, but it is, sometimes, the most cost effective. I love the walking path to MK, but it feels like an old airport terminal to me.

I think I need to amend my statement - I was just looking at the club level categories at GF as I know the bedding configurations in those rooms can differ (king beds, etc.) and noticed they are not guaranteeing day beds in their standard resort rooms, so I'm not sure GF is your best option - so sorry I posted that recommendation. I would probably go with Poly. Club level at Poly is really nice!
Keep in mind that many 1-bedroom villas sleep 4 and have a king and a sofa sleeper. If there is a third bed it's probably one of the kid-sized fold-down models. The kitchen/laundry is nice, though.GF club level is sooooo posh. The continental breakfast is lavish--or was pre-covid, I should add.
We stayed in the Royal Palm Club (main building) several times before buying into DVC.
I suggest looking into renting DVC points. You'll get similarly nice accommodations and more space for somewhat less money. The 1 bedroom or more villas have a fully equipped kitchen. At VGF, you can get room service, unlike many other DVC resorts.
Or keep watching the room rate listings for a DVC stay on cash. That will also cost less than regular room rates but will not be as readily available as renting points. Unlike a DVC stay on points, though, you get daily housekeeping.
We're about to experience that little fold out bed for ourselves. It seems utterly bizarre in theory, BUT it is a solo sleeping option the OP wanted. So that *is* a valid option.I would also consider a Deluxe Studio at Riviera. The split bath layout is great, especially for three adults. Being on the Skyliner Route is also a bonus.

Another option is to rent DVC points for Poly.
Yes! And the Studios have a split bath layout like Riviera, which is really nice.
