Rental car logistics

So we are flying into MCO on Mon. Mar 27 and checking into Fort Wilderness and checking out April 3. We are then moving over to Sheraton Vistana Villa Resort for a couple of nights before flying home. Getting to and from the airport, we want to rental a car because it's just easier with all our stuff and so we can stop at grocery stores and pick up last minute things and groceries.

I'm thinking we can do either of 3 options:
1. Rent a car from MCO for 1 day to be dropped off at Disney car care and shuttled to Fort Wilderness
2. Rent a car from MCO for the whole trip and dropped back at the airport when we leave (8 days)
3. Rent a car from MCO for 1 day to be dropped at Disney care care and shuttled to Fort wilderness and then rent another car for 2.5 days from the day we check out of Fort Wilderness to be driven to our offsite hotel til we fly home.

So far I've tried to price them out and option 2 is the cheapest even though we probably won't use the car much during our stay onsite. Is there another option I am not seeing? Please help! Thank you!

It's not uncommon to find a really good weekly rate that is the same (or better) price than 2 one way rentals.
There is lots of competition at MCO so weekly round trip rentals can yield some great prices.
Added bonus is that $$ off coupons can usually be found/applied to weekly rentals (not usually available on short or one way rentals)
The rental car will also give you the option of an excursion offsite, ie: outlet mall, beach day, offsite restaurant/dining, other theme park (Seaworld, Universal etc)

Book what works for you now on a cancel-able reservation then check back often to see if the price drops (re-book and cancel old when this happens...rinse and repeat until departure day)

As far as other options, the one way from MCO to CCC and then Uber for the rest of your running around may work, but I doubt it would be much less expensive than the car rental (for the whole trip) and probably less convenient too.
