Can anyone help me with suggestions on what a good range of gratuity would be for the Remy Dessert Experience? Since it's not a standard meal I'm a little lost and I don't want to offend the staff.

Seriously, they won't be "offended" whatever tip you leave. As with all tipping on DCL, it's really up to what you feel the meal/service was worth TO YOU. What's worth $50 to one person may be worth $10 to another. And both are correct.
 
I guess I don't see enough of a difference from a standard meal for me to tip any differently. The waitstaff are still bringing and clearing your plates, keeping your drinks filled, etc.
