refreezing pork chops

I took pork chops out of the freezer (that I have vacuumed sealed) last night to cook for dinner tonight well...not going to happen.(DH has other plans) Tomorrow and Sunday we have graduation parties so they won't get cooked then either so my question is can I just refreeze them and use them on Monday?
 
I was going to say "no" but double checked and surprisingly, if you defrosted them in the fridge you can safely refreeze. They may suffer a bit quality wise though.

"It's best to plan ahead for slow, safe thawing in the refrigerator. After defrosting raw pork by this method, it will be safe in the refrigerator 3 to 5 days before cooking. During this time, if you decide not to use the pork, you can safely refreeze it without cooking it first."
 
Good thanks for the quick reply....put them in the freezer again.
