I am really trying to be a good mother-in-law. My dear Son-in-law ate red velvet cake last year and thought it was the best cake he had ever eaten. His birthday is in a couple of weeks and being the good soul that I am, I told him I would bake him one. Problem! I don't have a receipe. Does anyone on these boards have a receipe for Red Velvet Cake?
He also wants me to make Hoppin' John for him. He says mine is better than my daughters because her rice is always too sticky.
Any help with the cake receipe will be greatly appreciated.
 
I buy the boxed mix at the store, frost it with the whipped frosting in a can and get lots of compliments. Don't even have to tell him it isn't home made. I'm sure I have a recipe somewhere, I've just never made it from scratch.
 
Red Velvet Cake

1/2 cup shortening (not butter) 2 oz red food coloring
1 1/2 cups sugar 1 tsp vanilla
2 eggs 1 tsp vinegar
1 cup buttermilk 1 tsp soda
2 1/4 cups cake flour 2 tbls cocoa
1 tsp salt

Cream shortening, sugar , & eggs. Make paste of coloring and cocoa. Add to first mixture. Add salt, flour, buttermilk, and vanilla. Mix in, but do not beat vinegar and soda.

Bake 30-35 minutes in two 8-9 inch cake pans at 350.

Whipped Cream Frosting

1 cup milk
2 tbls cornstarch
Cook until thickens & cool.

1 cup sugar
1 cup butter or margarin
1 tsp vanilla
Cream together.
Add cooled mixture & beat until it looks like whipped cream.

I've made the boxed cake mix and it is good but nothing beats scratch cakes.
 
Red Velvet Cake is very pretty and tasty too. The recipe I have at home is similar to the first one, with cocoa and buttermilk. I frost mine with Cream Cheese Frosting.



REAL Red Velvet Cake Recipe with Cream Cheese Frosting

Cake:


1/2 cup shortening
1 1/2 cups sugar
2 eggs
1 tsp. vanilla
1 tsp. butter flavoring
1 1/2 oz. bottle of red color
3 Tbl. (level) cocoa
2 1/2 cups sifted cake flour
1 cup buttermilk
1 tsp. salt
1 Tbl. vinegar
1 tsp. baking soda

Cream shortening, sugar, eggs, and flavors. Make a paste of cocoa and food coloring. Add to first mixture. Alternately add flour and buttermilk. Mix baking soda and vinegar in small bowl; add to batter. Blend. Bake in three 9" or 10" pans for 20 - 25 minutes at 350°. Let cool completely. Cover with frosting.

Frosting:

2 packages cream cheese (3 oz. each), softened
6 Tbl. butter, softened
1 tsp. vanilla
2 cups sifted powered sugar
Blend all ingredients until smooth.




Easy Red Velvet Cake


1 (18.25 ounce) package white cake mix
1 (3.5 ounce) package non-instant chocolate pudding mix
red food coloring, as desired
1/2 cup buttermilk

Directions

1) Preheat oven to 350 degrees F (175 degrees C).
2) Prepare cake according to package directions, substituting half of the water called for with buttermilk (approximately 1/2 cup). Stir in pudding mix and food coloring.
3) Pour into cake pan(s) and bake according to package directions.




Red velvet cake

Makes 12 servings


2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cocoa
3/4 cup vegetable oil
2 cups sugar, divided
2 eggs
1 (1-ounce) bottle red food coloring
1 cup buttermilk
1 teaspoon baking soda
1 teaspoon distilled vinegar
1 teaspoon vanilla extract
3/4 cup milk

1. Sift together flour, baking powder, salt and cocoa into a bowl.

2. In a second bowl, beat oil and 1 1/2 cups sugar. Add eggs, one at a time, beating well after each addition. Add food coloring; mix until well-blended. Combine buttermilk and baking soda. Beat into oil/sugar mixture alternately with flour mixture. Add vinegar and vanilla; mix well.

3. Spoon batter into 2 oiled 9-inch round cake pans. Bake in a preheated 350-degree oven for 25 to 30 minutes, or until a wooden toothpick inserted near the center comes out clean.

4. Remove cake from oven and release from pans onto a wire cooling rack. Combine milk and remaining 1/2 cup sugar in a saucepan and bring to a boil. Spoon evenly on both cake layers. Cool, then cover with favorite frosting.





Red Velvet Cake

1 cup + 1 Tbsp shortening
1.5 cup sugar
2 eggs
2 ounces red food coloring (yes, a whole bottle)
2 Tbsp cocoa
1 cup buttermilk
1 tsp salt
2.25 cups cake flour
1 tsp vanilla
1 tsp baking soda
1 Tbsp hot water
1 Tbsp vinegar

Cream shortening, sugar, and eggs. Make a paste of the cocoa add food coloring
and add to creamed mixture. Add buttermilk and salt, alternating with cake
flour. Add vanilla. Dissolve soda in hot water and add vinegar (it will foam, so
leave room) and quickly add to batter. Pour into three 9" layer cake pans. Bake
at 350F for 30 minutes.


Frosting

Red Velvet Cake is also good with cream cheese frosting.

3 Tbsp flour
1 cup milk
1 cup sugar
1 tsp vanilla
1 cup butter

Cook flour and milk until very thick. Chill thoroughly. Cream sugar, vanilla,
and butter. Add flour mixture. Beat until nicely spreadable. Refrigerate frosted
cake.
 

Yep margie that first one sounds like the recipe I've had! Traditionally it seems cream cheese frosting was what goes on it?!
 
Thanks all of you for the replies. I can't wait to try them out. I really want to be the best mom-in-law possible. I only have the one daughter and she and I are very close so naturally I want to be close to the son-in-law as well. Again, thanks to all who responded.
 
Uncle Butch’s Red Velvet Cake

Two layers=350 degrees for 30-35 minutes
Cream: ½ cup crisco
1 ½ cup sugar
2 eggs

Sift 3 times 2 cups Swan Down Flour and add to mixture
½ teaspoon salt
1 Tablespoon cocoa
Add: 1 teaspoon vanilla
1 cup buttermilk
2 oz bottle red food color
Beat well then fold in 1 teaspoon soda that has been dissolved in 1 Tablespoon vinegar

Frosting:
1 cup milk
¼ cup flour
dash salt
Cook over low flame to a pudding stage
Cool
Cream together: ½ cup crisco
1 stick margarine or butter
1 cup sugar
Add: 1 teaspoon vanilla
Add to cooled pudding mixture and beat until smooth.
