Hello everyone! Instead of offering advice, I'd love to solicit some of yours in regards to pre-made gluten-free items. My DFi and I are trying to plan a very small wedding for this fall and want to ensure that his nephew, who has Celiac's disease, can have a piece of cake. I've looked through the recipes online for gluten-free cake but realized that I didn't necessarily want to make an entire cake (since we'll already have wedding cake) and will be going to dinner after the reception. We also don't really have a sterile environment in which to make the cake and I'd hate for cross-contamination to occur.

That leads me to the pre-made, pre-packaged items. Are there any gluten-free cupcakes or cakes that you would recommend? Also, since I'd like the item to be frosted, what frostings would you say taste the best? My future nephew has no other allergies so we don't need the nut-free, egg-free, dairy-free items but would take them if they have better flavor than others.

Thoughts?

I only pre made ones I have seen have been cookies / brownies.
I use Miss. Roben's cake (the range has frostings too) mixes and they are great.
You could make a batch of cup cakes and let his nephew take the rest home.

A lot of supermarkets (in the UK, at least) do their own 'free from' ranges, which might have something suitable. You could also try talking to a couple of local bakers, see if they do such things, or have any specialist suppliers you could talk to. I'm afraid I don't know any brands off the top of my head, though. Sorry!

good luck with your quest! :goodvibes

I have made the Namaste choc cake mix. It's pretty much like a "regular" cake mix, except that it doesn't rise quite as much.

I would second the suggestion to make cupcakes. Then you can freeze the extras or give them to him. They are actually quite tasty though, you might want to keep them for yourself! Probably you could get a family member or one of your bridesmaids or someone to bake them up for you.

Thanks folks! The cupcakes idea entered my mind. I'm just a bit concerned about cross-contamination when someone else makes them in either their kitchen or flour-based bakery. My DFi would actually make them although he's always had great difficulty working with gluten-free things since it doesn't rise like gluten-full items do. (He's a former baker, by trade.)

I was thinking about checking some of the organic places. I believe I saw where Wild Oats has a gluten-free bakery and ships around the country. Not sure if anyone has experiences there, but it was a thought.

I'll look into the mixes you all suggested. Any recipes out there (that aren't pre-made) that are better than the mixes?

How come the one time I'm doing a Google search looking for products from the US, I manage to find hundreds of UK based sites and no US ones?! Usually I'm flooded with American sites! A quick search does reveal that there are internet based companies that deal solely in gluten free cakes, and some of the examples I've seen look pretty special! If you could find one such supplier locally, that was a reasonable price, it would take one task off you at what must be a very hectic time!

Good luck! :thumbsup2

Well I don't know about any pre-made ones, but the gluten free chocolate cake mix from CherryBrook Kitchen is yummy.

There is a bakery in Oveido, FL called Liberty Bakery that is totally gluten-free, and they sell cupcakes, not sure about cakes though. If you do a google search it should show up,and I think they do mail order now as well.

Mr Ritts http://www.mrritts.com/index.html tends to be pretty well reviewed. Their website is sort of abysmal, but the baked goods are supposed to be very good. They do both cupcakes and cakes, but you'd need to ice them yourself.

Wow! Thanks again folks for all the recommendations. I'll definitely take a good look at them. (Preferably during a week that hasn't been quite so hectic as this one though!)
