recommendations for vegan meals?

I'll be at WDW from December 2nd to 9th with my daughter. She is a strict vegan (has a medical condition that means she can't digest animal proteins) and even a small amount of something like milk in bread will make her ill. We have had very good luck eating at WDW (Boma is her very favourite) but wondered if anyone had any suggestions for restaurants with good vegan choices.

When you make your ADRs let them know you are vegan, then call the restaurant 5-7 days in advance, and when you get there ask to speak to a chef. Most of the places will take good care of you and some will enjoy cooking something better for you.
