We are going to have park hoppers so I'm thinking of doing a few hours at MK on a night that is a MVMCP night so I guess they'll kick us out at 7:00? I'm thinking we may just run through rides as fast as we can for a few hours and then leave at 7:00 and have dinner at a resort. We already have an Ohana reservation for another night to see wishes. So what would your recommendation be for a dinner that will be at a fun resort to visit and not too hard to get to from MK? Keep in mind, we have some picky eaters...

1900 Park Fare at the Grand Floridian is great fun. Cinderella's Step-Family is hilarious, and it's a buffet, so everybody can get little bits of everything if they want.

I suggest the Whispering Canyon Cafe at the Wilderness Lodge. It's a nice boat ride over and the meal and CM interaction is great.

I second Whispering Canyon Cafe and also throw Kona into the mix. I know it's in the Poly and you're already going there another night, but it's good. If you're interested in Character dining, you could also do Chef Mickey. I wasn't overthrilled with the food, but it wasn't bad and the characters are great. Have fun!
