We love Southern BBQ and can't find it anywhere near home. We have enjoyed Bubblalou's Bodacious BBQ, but last time were disappointed. (We went to the one near Universal, if that matters.)
Recommendations? Our park time is at Universal, and we will probably be staying at Indian Ridge, though we don't mind a trek if it gives us a chance to explore something new.
Really, we want the kind of place with three or kinds of sauce on the table, you know? (I know there are plenty of places that do something else and include some pulled pork or brisket on the menu, but that would be in addition to a real BBQ place.)

) and it had too many dead things on the wall. Luckily for us, this caused us to try the Chuy's Mexican place next door, which was really great--and no taxidermy!
And hope the only dead things are the ones in BBQ sauce...
