Recipes: Peppermint Bark & Kahlua Fudge

Several people on the community board have requested the following 2 recipes..so thought I would post them over here in time for the holidays..Enjoy!

Kahlua Fudge
1 1/3 cups granulated sugar
1 7 oz. jar marshmallow creme
2/3 cup evaporated milk
1/4 cup butter
1/4 cup kahlua
1/4 tsp salt
2 cups semi sweet chocolate pieces
1 cup milk chocolate pieces
2/3 cup chopped nuts (optional)
1 tsp vanills

Line 8" square pan with foil..in saucepan, combine sugar, marshmallow creme, milk, butter, kahlua, and salt. Bring to a rapid boil, stirring constantly for 5 minutes. Remove from heat..add all chocolate, stir till melted. Add vanilla and nuts (if using nuts). Turn into prepared pan. Refrigerate till firm.. Makes about 2 3/4 lbs

Peppermint Bark
Melt 2 12 oz. packages of white chocolate chunks in a metal bowl over steaming pan of water
Line the bottom of a large cookie sheet with foil. When white chocolate is melted and warm, pour and spread on foil. chill 10 minutes or so, until hard
Melt 1 12 oz package of semi sweet chocolate chunks and 1- tablespoons whipping cream in a sauce pan over low heat. Add 1/8 tsp peppermint extract. Pour and spread over white chocolate mixture
Top with crushed peppermints (12 regular candy canes work well)..just put them in a ziploc and smash them
you can either place the semisweet chocolate on the bottom and the white on the top..or reverse them..the white on bottom is prettier..but both taste delicious!

I make peppermint bark as well!

My recipe calls for the crushed peppermint sticks to be mixed into the melted white chocolate (The dust will turn the chocolate pinkish) before spreading on your cookie sheet.

I also do not add cream or peppermint extract to the dark chocolate. I always do the dark chocolate on top and top with some crushed peppermint sticks as well (just not the dust:teeth: )

You can melt chocolate in the microwave - just be careful with white chocolate - it needs less time to melt and burns easier than the dark chocolate. To microwave - do in 20 second intervals and stir before nuking again. Microwave until not completely melted - if you keep stirring, it will melt fully.
 
Just wanted you to know I made your Kaluha fudge and my dh loved it. He in the past has only liked the hard sugary fudge that his mother used to make. He said this was the best soft fudge ever. Thanks for posting. I'm doing peppermint bark next.
 
I did peppermint bark for the first time 2 yrs ago....and it was just an experiment/accident! DD & I were dipping things in various colors/flavors of chocolate (dark, milk & white) - cookies, pretzels, apricots, nuts - and I dropped a small candy cane into the white chocolate by accident. (My blood sugar was low & my hand was shakey.) Yummmm!!!!! We ended up dipping some & smashing others to make bark. We also were making molded chocolates & had some red melting caps for that. I drizzled some of the red over the hardened peppermints/chocolates which really looked festive! I really liked it in the dark chocolate, but the white was my favorite.

I have a stupid question though...is that Marshmallow cream, like Fluff?
 
yes...just like marshmallow fluff...you can usually find it in either 7 or 14 oz glass jars..or you can buy those plastic tubs and measure out what you need!
