This is the only way our family eats salmon:
SUGAR-GRILLED SALMON
1 1/2 lbs. salmon fillet
1/2 c. dark brown sugar
2 tbsp. soy sauce
2 tbsp. dry sherry
4 tbsp. butter, melted
1. Place salmon in a disposable aluminum foil baking-barbecue pan. Place fillet skin side down in pan.
2. Combine all remaining ingredients. Stir until sugar dissolves. Pour over salmon. Let sit 15 minutes.
3. Place foil pan over hot coals, gas or electric grill. Cook until salmon just begins to flake, brushing with sugar sauce while cooking. Do not turn fillet. Be careful not to overcook salmon. (Note, if heat is too high the sauce will burn.)
4. Drizzle sugar marinade sauce over salmon and serve. Makes 4 servings.
