hi, has anyone gone for 8am emh to sign up. I’d planned on doing emh when DS said he didn’t want to to Jedi training but he’s since changed his mind. Will this just be a waste of an emh? Thanks!!

We did this a few weeks ago. We didn't go straight to Jedi Training because we wanted to head to TSMM right away with there being no fastpasses and standby only! We got to Jedi Training around 8:30am and there were still plenty of spots left. It only took a few minutes, there was no lineup at all.

Are you able to sign up for who your child would prefer to battle between Darth Vader and the Seventh Sister? Obviously most people would prefer Darth Vader, but when you sign up, is it first come first served as far as preference of character?

Not at the signup. When you check-in your child stands on a circle and I believe the front is Darth Vader and back is now Kylo Ren. Ask a cast member and they should direct you to the right place!
It's Darth Vader and Kylo Ren. To tell you the truth, I think the parents care more about who the kids get to "battle" than the kids do.
My children did this on 5/21 and battled Darth Vader. I asked them if they asked to battle DV or if it was random. They said that it was random. Then I asked if they had a preference. They asked me what I meant. I then asked if they wanted Vader or Ren and they said that it didn't matter because everyone gets to do the same thing.
ALL of the kids that participated looked like they were having a great time.
I signed my kids up before a H&V PPO breakfast reservation. All times were open. People were still signing their kids up well after park opening.
We went first thing through the gates a week and a half ago. My husband and other two kids waited in front of Starbucks. We were done with Jedi sign ups and ovwr to them before the ropes were even dropped. It rained out our show and we had our pick of what later one to do bc there were spots open in every show.

They did not ask at sign ups or when we went for the training. Theu also didn't announce to the kids which line was which and I didn't hear anyone ask. Kids were not told who they were fighting and did not know until they came out unless they had seen a prior show. Front row for DV and back row got KR. No one put up a fuss or seemed distraught about who they fought.
