If you are using the dining plan do you still get a receipt that shows how much you got and what it WOULD HAVE COST if you'd had to pay for it ?

You get a receipt, but all numbers and totals are "0".

What I did to keep track was when ever server handed me the receipt to sign(their copy does have actual totals, including tip given) I would write that amount on my copy with all the zeroes.

just wrote the amount that was on the receipt I signed and gave back to the server on my take away receipt (which only shows the number of CS or TS credits used).

I put them all away and the calculated them when I got home. Did pretty good, I think. One dinner for ds and I (used 2 TS credits) cost about $120. So that more than made up for the cost.
