We have been traveling to Orlando for the last 12 years and are DVC members. The last day has often ended up as one of boredom and frustration. So we decided about 8 years ago that we would always have a full day planned to as to get the most out of our holiday. Here are some of my tips for having a great last day.
1. If you are flying with Virgin or BA, use online check-in (or virgin DD check-in). This will allow you to arrive at the airport up to 1 hr before the flight checks in.
2. Pre-pay for Gas with your car rental. You then can return the car empty. The days of rip off rental car gas are long gone. Last october the prices were comparable with the stations around disney. The cheapest place for petrol is usually the hess at downtown disney believe it or not!
3. If you need a meal when you arrive at the airport. Go upstairs to McCoys in the Hotel. It is rarely busy and serves fantastic food. Much more relaxed than the places in the airport proper.
4. Choose any park other than MK for the last day! The time needed to park, get to TTC, get the monorail, enter the park etc. and then do it all in reverse, will seriously eat into your day. We find epcot is usually our choice for a relaxing and fun last day. It is quick to get back to your car and you exit straight onto the road to the airport.
5. Spend the day looking around disney resorts, and eat lunch at one of the resort restaurants. We usually park at the Poly and then use the monorail to go around to the other resorts. You can also take the boat over to the WL or FW camp ground. Loads to do and see. Many UK travelers never bother with the resorts.
6. If you are staying at a disney resort, then get out as early as possible, and leave your luggage with bell services (they will collect it all from your room). They will look after it all day until you are ready to depart. This is great if you are on Magical express as you can go off and enjoy yourself, and then pick it up when you are back to catch the coach.

PS: Forgot to add. You need to allow an hour to get through security at MCO and get over to the gate. It is usually quicker than this, but it can be slow. Also if you have used Virgin Online check-in, or DD check in and still need to drop bags at the airport, the staff have a habit of filling up the bag drop queue with people who are yet to check in. If this looks to be the case, make sure you grab a VS staff member and tell them that you are just dropping bags. They will usually get you through quickly.
