Realistically, if I am a bit flexable about times how far out do I need to make reservations?

Are there any places that are harder to get into and should definiatly be booked WAY out?

I am just beginning to make a plan, and we probably won't book our trip for a couple months yet... We are thinking of POFQ now, but are flexable as to which moderate we stay at so I am not to worried about that, but we are foodies so I am sure I will want to try certain places for table service.
 
If you are flexible on times, I wouldn't wait more than 2-3 weeks beforehand. Some like Cindy's and HDDR would probably fill up almost immediately but the others can wait till a month before.
 
I would add Chef Mickey's, Crystal Palace, Prime Time, Sci Fi, and Le Cellier to the list of "Book ASAP."

Also, if you want to have dinner at California Grill and time it to see Wishes, you should book that quickly.

It looks like you are going in mid-October, so you will not be up against peak crowds. If you are flexible you should be fine for the most part. But if you have your heart set on eating at a particualr restaurant you should make ADRs as soon as you can. Tehy're free and you can always call back to cancel or see if you can change the time.

I'm in the minority on this list.... except for the restaurants that I *REALLY* know we want to eat there, we almost never make adrs before we get there. But we are really flexible on times and dont do CRT or CM so that makes it easier.
 

It looks like you will be there in October. The Christmas parties (and I think the Halloween as well) tend to create lots of bookings at Crystal Palace and Liberty Tree Tavern. I believe this is because people attending the parties can gain early admission with an ADR. I have found Ohana dinner also books the popular times quickly. Ditto what everyone else said about character meals, Cal Grill, Le Cellier.

...however, it is Food and Wine at Epcot, which has good news and bad news:

The bad news first: It brings crowds of foodies into Epcot (and a few drunks) who book up the table service restaurants.

The good news: if you don't have a table service reservation, Epcot is filled with booths selling small portions of food - you won't starve and it may be worth planning a day where you spend the afternoon "snacking around the world."

The factor no one has mentioned is party size. Four seems to be the ideal party size at Disney. More and it becomes more difficult to walk in. Two can be pretty easy as well. But if you are traveling with six or eight, make ADRs often and early.
