Mickey's Philharmagic -- 5++!!! We loved this show! My DD6 wanted to do it over & over. I have to say that my DS, who'd just turned 3, wouldn't wear the glasses after about 2 times. He would jump every time the champagne corks popped - not scared, just startled.
Turtle Talk -- haven't seen this one yet, but can't wait!
Playhouse Disney - For 2 year olds, I'd have to give it a 5. DS was 15months the first time we did this one & he loved it even then. Both of my kids dance & sing along. When you think about it, toddlers know these characters and shows better than they know classic Disney.
Voyage of the Little Mermaid - 4. We really like this one. At 15 months, DS watched the whole thing. But at 3, he was a little frightened by Ursula.
Beauty & the Beast Live on Stage - 4. This is one of my favorites. I love the music, the costumes, the story. I just wish they still had the doves at the end. For me, this is a can't miss. Both of my kids really enjoy it, but it didn't captivate them yet.
Festival of the Lion King - Another 5+++! This is my absolute favorite show in the "world"! And my kids adored it! They know the songs and there is practically non-stop action. I simply can't recommend this show enough!
Tarzan Rocks - Sorry to say, but I give this a 1. We stood in line to see this in '02. DD was 4 & DS 15mon. Even with all of the music and action, they both fell asleep. It just didn't capture their interest at all. They didn't even want to go back to see it last year. Fine by us, as we didn't like it that much either. BUT, since it's going away early next year, you should decide for yourself if you want to catch it before it's gone.
A show you didn't mention, but that my kids liked is the Flights of Wonder bird show in AK. I would rate it a 3, so I wouldn't kill myself to fit it into the schedule. But, if you're there at the right time, it's worth seeing.
Have fun!
