We have a reservation at Rainforest at 7:15pm, after park close. Busses should still run for a while to the resorts, correct? (I know Uber is an option but it would be 2 vehicles...)

Buses generally run at least an hour to an hour and a half after park closing, but also Disney will not leave their resort guests stranded. There should be a bus available when you finish your meal, since Disney knows many guests like to eat at RF after AK closes.
