Winter rains in FL tend to be brought in with cold fronts, and not daily as with the summer thunderstorms. As a result, you may see more of an all-day or partial-day rain or dreariness, not intense showers that come and are gone like you would in the summer. Rides may not be as effected as a result (since lightning is not as likely), but rather it will just be a matter of your tolerance and preparedness for getting wet. We are the type of family to gear up and make the most of the lighter crowds.
But also, agree with the PP who noted that the forecast for more than a few days out can change dramatically. Sometimes fronts that they forecast to bring rain through do not "sweep" the moisture down here far enough, and we just end up with a breezy, mild shift in the weather. I would check again in a few days if I were you before worrying about plans.
