Does anyone have a great recipe for Key Lime Pie they'd like to share? I bought some Key Limes at Central Market in Dallas over the weekend and want to make one for DH (one his favorites)

Sandy's Key Lime Pie

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 1/3 cup sweetened condensed milk
1 teaspoon grated lime rind
1/2 cup lime juice
2 egg yolks
Pie Shell

Heat oven to 350 degrees.
Blend milk with rind, juice and egg yolks until thickened.
Pour into shell, bake 12 to 15 minutes.
I usually pre-cook the pie shell a little first.
If you're making meringue, after you pour the mixture in the shell go ahead and put the meringue on top.
 
Most Key Lime Pie use a graham cracker crust. No need to precook.
Also be sure you use key lime juice not Persian lime juice. Very different taste.

My MIL recipe for Key Lime pie

1 graham cracker crust.
1 can Magnolia or Eagle Brand sweetened condensed milk
2 egg yolks
1/2 cup key lime juice.

Combine the sweetened condensed milk, egg yolks and key lime juice. Beat well. Pour into preprepared graham cracker crust and bake at 350 degrees for 10 minutes or until set.

You can serve it with whipped cream or with a merangue topping made from the left over egg white, sugar and baking powder.
 
I made it tonight and it was wonderful! I used a graham cracker crust, and DH loved it.
