At the world now for a quick weekend. I originally purchased a 1 day ticket for my daughter. Last night we changed it to a 2 day. Entered park today, tomorrow for second day. Can we do another upgrade to AP before tomorrow's entry?

Yes.
You can upgrade even after you enter the park tomorrow.
Upgrades need to be done before close-of-business on the same day that you use
the ticket's last entry.
