Quick service dining and alcohol selections?

Hi! Does anyone know if you can modify cocktail selections at Quick service restaurants? For example...a Rum and Coke is offered at Fairfax Fare, can I order a Rum and Diet Coke? Flame Tree BBQ offers a lemonade with tangerine vodka...can we order a tangerine vodka with sprite? THANKS!
