Hi,
I'm hoping all you great budget gurus can help me out here. Our neighbours 17 year old daughter has been hospitalized with a very serious infection. Her mother is staying at the Ronald MacDonald house as the hospital she is at is about 1.5 hours from where we live, she has a fridge in her room and access to a microwave. I want to make up some quick casseroles that I can portion out for her to keep in her room - I also want to send some over for the rest of the family who are still at home.
Here is what I am thinking so far:
Broccolli, rice & chicken casserole
Pasta Shells in sauce & cheese
Mexican rice with ground beef & corn
Beef Stew - in the crock pot
Banana Mufins - for breakfast or a snack while she is at the hospital
Any other suggestion would be much appreciate, I have chicken, ground beef, rice, pasta, tomato sauce, frozen vegetables and I don't mind buying a few other ingredients if needed. I'm thinking I will make double batches of these and then freeze the extra's either for us or to give to this family at a later date.
