We are having brunch for 26 which includes 9 kids. The menu consists of bagels, pastries, fresh fruit, hashbrown pies, a cheese and veggie platter. For drinks, smoothies, mimosas, assorted juices, and bloody marys :cloud9: Since I don't eat eggs and very rarely make them, I'm not sure how many quiches? I will make a plain bacon and egg one for sure. But how many more and any ideas as to what kind?

Also can you think of anything else I can add to the menu?

Sounds delicious. When should I arrive. :rotfl:

I think a 8 - 9 inch quiche wold serve 8 slices and with all the other food you have 3 would probably be plenty but you could make 4 to be safe. Some choices are cheese and mushroom, green pepper and onion, spinach, ham, shrimp or crab. I would make at least one vegetarian.

What is the event?

since its brunch, a ham would make a nice addition.

I would do 2 vegetarian quiches, don't worry about making more of that there's too much other stiff and not everybody is going to have quiche. I wopuld do a spinach and swiss and maybe a cheddar and mushroom. I would also do a breakfast strata - you can do that with cheese and bacon - cheese and sausage, cheese and ham etc. Search allrecipes.com for the strata. I make one every year for Christmas morning.

We make quishes for family brunches. 3 8-9" ones should be plenty with the other food, but I'd go ahead and do a 4th. I'd go with 2 meat and 2 veggie.

you asked for other ideas what about yogurt parfaits?

If you know how many you'll have you can make it in advance.

Start with a tablespoon or so of berries (chop strawberries if using them)
layer of roughly 2 tbls yogurt (mixed with fruit or plain your choice)
layer of about 1 tbls granola

Repeat ending with the fruit and sprinkle a little granola on top. I use a stemed water glass/goblet but you could use anything that will show the layers.

Also for the quiches mini ones in pre frozen tart shells could make for a very cute serving size option. (plus no cutting!)

My DGS (4) loves quiche. Especially the small round ones you buy frozen - just need to pop them in the oven!!

Lots of great ideas. I think I will do 4, 2 meat and 2 vegetable. Sounds like enough considering the other food.

Thanks.

I made quiches for a bridal shower one year and they were a big hit. I did a carmelized onion/bacon as well as a spinach/artichoke. For both I used gruyere cheese. They were both amazing!!!! This was more of a luncheon so I served them with salads and other appetizers.

Quiche :rotfl: , lol, needless to say we dont hang around the same type of people. I some day hope to improve my social standing to have Quiche eating freinds

Sounds yummy. I might add a baked french toast. Or a coffee cake.
