As far as know, no. There is not really much of a way around this. I think your best option would be to go ahead and get the 10 day ticket for your first resort stay, and then just get the minimum 1 day ticket for your 2nd stay so you can still have the dining package. The 1 day tickets will be good for a future visit. Tickets expire 14 days after their FIRST USE (if you don't purchase the not expiration option) so as long as you don't use the 1 day ticket you can save it and use it in the future.
You also might try running the cost and decide if the cost of the additional tickets really makes the Dining Plan worth the money. With all the cutbacks to the dining plan next year it may just be cheaper for you to plan to pay out of pocket for your meals for those 3 days than to pay for the additional tickets plus the dining plan.
Something else you might think about is if you think you will really use all 10 days of park tickets. When we go for 7 days we only get 5 day tickets and have 2 no park days for Downtown Disney shopping and hanging out at the pool and visiting other resorts and just rest time. Also during that time will be Mickey's Very Merry Christmas Party which is a seperate ticketed event and costs extra, but doesn't require you to use a day on your regular theme park ticket. When we go to that we relax by the pool and shop until time for the party and then head to Magic Kingdom and use the party ticket.
