Can you book them further than 120 days away? I would really like to try to get the chef's table for one night between (9/24 & 9/30). Do you think this is possible?

Chef's table can be made 180 days. When I booked the girl who answered at dining reservations did not know this. I told her to get someone from group dining on the line (which she did) and they booked it. Good luck. Totally wonderful experience and welllllllll worth it.
