The next to last nite of your stay.
That way, you don't have to worry about getting up and doing the 'whole leaving thing' the next morning.

I second that! I hate doing a nice dinner the last night because I know I need to pack and usually get up early to check out. The second to last nite is a perfect time for a nice dinner, especially V & As. It will be very memorable, Enjoy.
