Question about switching meals on DDP

We are heading to the world on the DDP. We are paying for 4 adults and 1 child meal because of the age of the children(12, 11, 8 at time of trip)

My question is, my 11 yr old is supper picky, would anyone at a sit down meal question us if we let my 8 yr old order off the adult menu and the 11 year old got the child meal? It is all the same number wise just different person eating the meal. We are not cheating any right?

If by chance the 8 yr old does not want an adult meal could we still use the adult credit to get a child meal?
 
They don't care who eats what. As long as you order the appropriate meals, as you stated, you can all share everything for all Disney cares.
