I want to try this recipe for Bolognese sauce from Emeril:

When it says to simmer for 1 1/2 hours, is that covered or uncovered? Will it reduce if I cover it?
Also, can I drain the pan after browning the meat or will I lose too much flavor (ie fat, ha ha)
