Question about preparing food for a trip

I have a couple of questions about preparing food for our trip ahead of time. We are going for a four day weekend next Friday. We are leaving very early AM and going about 4.5 hours away.

I'd like to make a roast beef dinner on say Monday of this week. Slice the left overs to have as sandwiches on our trip. Can I seal it with my food saver and freeze it for a few days and not have it spoil in the fridge over the long weekend?

Anyone ever precook bacon? Can I seal that and have it last two or three days?

We are going to the beach and I just minimize my cooking time and the mess.

Last question: We are having marinated steaks on Satuday night. Anything wrong with premixing it? Oil, vinegar, soy sauce and spices. It calls for minced onion but I'll just bring my chopster and add fresh onion when I'm ready to put the steaks in the marinade.

Any tips or advice would be appreciated.

I pre-cook a lot of things and freeze them. Both for camping, and just as a time saver at home. I had the BIG foodsaver, but I wasn't real thrilled with it. Now, I just use ziploc freezer bags and squeeze as much air out as I can. It works fine. Bacon - I HATE cooking bacon, but I love eating bacon. I will cook as much as 6-7lbs at a time and just put it in the fridge and take out as needed. That way, I only have one mess to contend with. It will keep for about 2-3 weeks cooked and properly refrigerated. If I don't think I will use that much, I'll freeze the cooked bacon. No problems.

Make your trip as easy as possible, and cook ahead of time. That way when you come back from a park, you'll have dinner ready in no time. On a four day trip, your food is not going to spoil if you keep it properly chilled.
 
We are big fans of the pre-cooked bacon sold in places like BJs and the supermarket. Takes just a little while to heat up and much less grease and odor to deal with in the trailer.

I like the idea of slicing the roast up for sandwiches later. We also make a mean hash out of least over roast or sometimes a great stew. That is, if we don't act like swine and eat it all in one sitting!

For the last 5 or 10 years we have always cooked up like two lbs of bacon or breakfast sausage patties and frozen them and then had them cold or for the sausage nuked for a few seconds in paper towel when needed. It's actually good ... a couple of hot freshly made muffins and 3 strips of bacon is good.

Again, I would do it all ahead of time and like the bacon I will sit down and have a marathon onion chopping session and fill up like a gallon zip lock full of chopped onion that goes into the freezer which is then used in cooking. The same goes for green and red peppers along with diced celery and sliced mushrooms. As long as it's being cooked any softening due to freezing is not really and issue and a lot of stuff freezes really well.

Another favorite of ours is be buy like 20 or 30 ears of corn when it's in season and really cheap, freeze it and then we have fresh corn year round and even 8 months later, it's still as good as when it was fresh and saves a bunch of money when you buy it for like 6 or 8 ears for a buck.

I bring lots of pre-marinated, refrigerated food when we go camping! I use the big thick freezer bags -- chicken w/Italian dressing, Steaks with ginger/soy marinade, Fish with lemon and dill, etc. Makes it much easier when cooking time comes! Just take it out and throw on the grill -- no need to bring spices or anything else with you! :)
