Question about pre-booking shore excursions

I'm sure this has been posted but I couldn't find the info. Can we book shore excursions 90 days out now? It was 60 when I cruised last year.

Yes, 90 days out.

Now here's the rub -- DCL website says once you've paid in full.

How do you find out information about shore excursions etc please. Do Disney send any information out and when.
