Question about offsite and dining reservations

We are staying offsite for the first half of our trip this Jan. When I get to the 90 day mark (it will be Sunday) can I only make ressies for that day only or can I make them for the whole week. Also, are any tables not released until the 90 day mark to give offsite people a chance at some of the more popular restaurants or are they just out of luck for places like LeCellier? Thanks
