I think I know the answer to this but just wanted to be sure...
The DCL policy is for guests 21 and over to bring a max of 2 bottles of wine or 6 beers (12oz).
Is this per person or state room? It looks to be per person which would allow 2 adults to bring on 4 wine, 1 wine and 6 beers, or 12 beers.
Am I interpreting this properly?

The alcohol carry-on allowances are per person (adult over 21). Security has no clue to who is for what cabin. I also normally carry for both myself and DW in my napsack (technically twice the personal allowance) and they seeing us as a group have never questioned me having 4 bottles (carton) of wine.

Each person age 21 and over may bring 2 wine OR 6 beers.

A room with 2 people could have 4 wine OR 2 wine plus 6 beers OR 12 beers.

Also, unless it's changed, you can restock in the ports you go to. So again, another 2 bottles or 6 beers per person in each port.

it's per person and you can mix and match wine and beer. I carry on usaully 2 bottles of wine and 1 12 pack of beer in teh same rolling suitcase and just point to my hubby and mom when they count

If you have more than one adult traveling, you can have a mix of wine and beer as long as you stick to the prescribed amounts. But if it is just one person traveling, you must choose either 2 bottles of wine or 6 beers. A single adult cannot do 1 bottle of wine and 3 beers. And 3 adults could not do 3 bottles of wine and 9 beers. I'm just pointing that out because it seems to be a common question that comes up on the boards a lot and I wouldn't want someone to misunderstand your "mix and match" comment.

If only I could still drink that much
We ended up bringing a case of Caribbean beers home that we picked up on our western cruise. Actually - we always bring beer back home from Caybrew every time we go on a western cruise. Although being local to the port makes transporting it easier.

As stated... Up to 2 bottles (750ml) of wine -OR- six beers per adult 21+. These must be UNOPENED / SEALED. This can be repeated at each port of call.

Also, an unopened bottle of wine may be taken to a dinner seating where they will allow you to consume it with dinner. There is a $25/bottle corking fee assessed for this. If you do not finish the bottle, they will re-cork it and label it for you, and you can have it at a subsequent dinner.

Everything else is to be consumed in your stateroom only. Room Service will provide you with glasses and a corkscrew, you can also ask your stateroom host / hostess (though they are likely to have you contact room service), and you can also ask your dinner servers for wine glasses (I don't believe they could get you a corkscrew, but you could ask).

While it is true that you can bring things like this onto the ship at ports of call, they will collect anything that exceeds their alcohol limits policy and return it to you when you disembark. This would include bottles of liquor. The OP's question seems to deal specifically with what they can take on with them for consumption in the stateroom.

I am referring to beer and wine for personal consumption. We bring our allowed allotment of beer back at each port. Maybe drink a couple but carry the rest off. Last trip we brought back an extra 6 pack at 1 port but they let us take it to the room and only took the hard liquor.

You stated "We ended up bringing a case of Caribbean beers home." Since an individual can't bring a full case on for consumption in the stateroom, and you didn't you specify otherwise, I drew the conclusion that you were talking about bringing on a large quantity and them collecting it and holding it.

I can see that - I was referring to Caribbean beers as in the trip as a whole since we were on a western Caribbean cruise. And actually in Cozumel we get some great Russian and Eastern European beers at Mega. Our next cruise is Eastern so I'm looking forward visiting new breweries and finding new things to try.

And even if you do bring more on board than you allotment checking it is easy and picking it up is a breeze. We bought unchilled cans at Caybrew because we expected them to take the overage and I do not know how they store them.
