Question about Boma

We've had breakfast at Boma, and loved it! Now we're thinking of trying it for dinner on our next trip. After looking over the menu online, everybody had just one question:

What are "Potatoes with Afritude???" :confused:

Hi.. I found the recipe for it :D

Potatoes with Afritude
(Boma, Animal Kingdom Lodge)

Yield - 10 servings

5 lbs. Red skinned potatoes (any variety of potato may be used)
2 ounces Olive oil
3 tsp Curry powder
2 tsp Turmeric
1 tsp Garlic powder
1 tsp Paprika
Salt and Pepper to taste

Wash potatoes well, and cut into wedges.
In a large bowl mix the spices and olive oil.
Add the raw potatoes.
Coat the potatoes with the spice mixture.
Place the potatoes on a baking sheet, place in a preheated 350o oven and bake for 30 minutes.

Hmmmm....curry powder. DH should like those.
 
We stayed at AKL this past week and they served the Potatoes with Afritute for both breakfast and dinner at Boma. They were one of my favorite things. They were served with thin stips of red and green peppers. Yum!
 

Where did you find the recipe for it? My hubby is looking frantically for the recipe for the marinated flank steak that they have at Boma (I would prefer the recipe to the one at Garden Grill). I have searched the recipe sites that I have on the internet, but haven't come up with it yet. Any help any of you could give would be great. Thanks!
