People have such different reactions to bacon texture.
Mushy reminds me of eating tough phlegm or that icky gel in canned hams. The only meats that I will eat are super crispy bacon or a well done filet mignon.
I know what you mean, but it doesn't have to be that way. There is a sweet spot just before it gets to the dusty/powdery texture. It's easy to overdo it or underdo it, but it is possible to get it crispy without being dusty and bitter.
Bacon is probably the thing I miss the most since I started avoiding nitrites due to migraines. I can satisfy my pepperoni pizza craving with fresh italian sausage. I can satisfy my hot dog craving with fresh made bratwurst. I can satisfy my ham craving with prosciutto. But I haven't found anything to satisfy the bacon craving.
I don't know if it would be considered more crispy or chewy. I don't want it to flop over if I hold it vertically, but I also don't like it so crispy that it splinters and makes a mess when I try to bite it. I like it somewhere in the middle. Now, if it is going on a burger, it doesn't need to be crispy. It needs to be cooked, but it needs to be bendable enough to form itself to the burger patty when sealed on with a piece of cheese.
My brother always says 'Cook it so that it shatters when I bite it'! So gross to me. I like it well cooked but not to that point. My husband likes it floppy and that just grosses me out. So I guess right in the middle for me.
I hate super crispy bacon where it is cooked to the point where you can crack it into bacon bits. Ick. I like mine semi limp. Not so limp that it is barely cooked, but it still needs to be able to bend a bit without breaking.
