sdmeador, I'll be honest. The fact that you are asking this question is indicative that you are having reservations about it. Don't say that you will do any job thinking that it will make you look better and that they will think that you are so open that they will then give you your #1 pick. Anything that you say you are open to is fair game regardless of it is your #1 pick or #15 pick.
It is OK to say that you aren't open to a specific job. They even say that they prefer someone to do that on the site (1st bullet under prepare)
https://www.wdwcollegeprogram.com/sap/its/mimes/zh_wdwcp/apply/interview_tips.html
Also note that the 2nd bullet, they say if you have specific work location preferences to state them during the phone interview.
If you make it to the phone interview and indicate you are open to quick-service, then you can indicate your preference then. But keep in mind that this doesn't mean you will get your preference. Only means that they will make note.
My advice with any job on the CP is that if someone doesn't see themselves enjoying a job for 5 to 7 months, not to say during the interview that they are OK with it (saying "I guess, if it is the only thing open" is a "yes").
I did work a bit in Quick Service many years ago down there. I liked it, but others did not. But I can say the same thing with people I knew who worked in all of the positions (some liked attractions, some didn't. some liked merch, some didn't, etc.)
I feel that those who complain about quick service probably didn't read the role responsibilities carefully, convinced themselves when they were applying that they would enjoy it, or said that they were open to it when asked in the interview thinking that if they said "no" they would automatically get rejected for everything.
