PS Reservations and Park Hours

For our trip in August, we decided to just get the MYW base tickets with the plus options...meaning no park hopping for us....It basically came down to a choice between park hopping or the waterparks/pleasure island/disney quest...and we chose the later...

Now, here is the problem we have...We need to start making our PS reservations on Sunday but we also want to take advantage of magic hours ( early or late )...so that means we will be going to certain parks on certain days and want to make PS reservations for resteraunts in those parks for those days.....The problem comes in because the late/early openings have only been released through July...No August dates yet....This makes it very difficult to determine which days we will be at which parks....

I can kind of figure out a pattern with the early/late days at each park..it seems, for the most part ( with a few exceptions ) each park has its own days of the week for the magic hours...So, I plan to base my PS reservations off of that assumption....If I do have standing PS reservations at a resteraunt, is it a big hassle changing the date later on when the actual magic hours come out for August? Assuming I have to change them of course..
