It depends on when you go. Last year I found that in both August and Sept (when they did the free dining plan offer) there were NO reservations for walk ups at most of the table service places - even easy to get into places like Biergarten. The only option was to eat at less popular places at weird times, like dinner at 3:50 or 9:45. I highly recommend ADR's if at all possible.
They do not hold anything open for walkups but people cancel all of the time. I would keep trying. Even on the day of, you can check with guest services in any of the parks to see if there are any openings for that day.

They SAY they don't hold anything open for walk-ups, but my recent trip to WDW made me wonder. I had ADRs at LTT for lunch, and noticed as I walked into MK that the sign outside City Hall said that all resturants were booked for ADRs. When I checked in to LTT, the family in front of me was wanting to eat there with no ADRs. The CM told her there'd be about a 1/2 hour wait. Well, the mother didn't want to sit and wait, so she said "How about if we just make [ADRs] for a specific time and we'll come back then". The CM told her "We don't have any more available ADRs, you'll have to wait."
The next day, I was at 50s Prime Time. I was kind of disappointed with my ADR time, but when I booked a month ahead, that was the only time available. Yet again, a family in front of me wanted to eat lunch with no ADRs. "Oh, were we supposed to make [ADRs]? We just thought we could come in and eat." "No problem," the CM said, "Just take a seat over there and it will be about a half an hour."
So now I'm not sure what to believe about needing to make ADRs.
Check when you get there. It is possible they get cancellations. I had tried for ADR for lunch at the Rose & Crown before we left home. I checked with the CM at the POFQ desk and had my pick of two seperate days. each with 2 time spots.
