Prime Rib? Is it really this easy?

Went to the butcher yesteday asking about prime rib. He says, "Ma'am,
it's the easiest piece of meat to cook!. 350 uncovered for 22 minutes a
pound. Buy a pound per person. Rub it with garlic salt and oil. voila!"

Does anyone disagree? Or-have other suggestions? I'm making it in
honor of my husband and DFIL who both love it. DS is a vegetarian so
we'll have loads of veggies and my favorite-mashed potatoes.
 
Yes-it is pretty easy- I'm making this also. one very strong suggestion is to use a meat thermometer, and take it out of the oven when it is within 5-10 degrees of the doneness you want, and plan on letting it sit for about 20 minutes before carving-itwill continue to cook while it sits. I figure it costs too much to take a risk on it not coming out right- the thermometer will take care of that-enjoy!!!
 
looking for other suggestions on how to cook it and season it also..I bought one today for our xmas dinner..just a 3 1/2 lb one since there's only the 2 of us...but the butcher here says 325 for an hr and a half..that sounds like too long to me?
