Pre-fantasmic dinner

We are just a month away from our trip and I'm hoping to get some suggestions. We have booked the fantasmic dining package for lunch at 12:05. I have booked early FP+ thinking we more than likely won't find ourselves spending the entire day at HS. So, where would you suggest we grab dinner? I haven't found myself overly impressed with the dining options at HS. I was thinking somewhere near international gateway in Epcot (we have hoppers) but thought there may be a hidden gem in the area that I'm not thinking of? For reference we are staying at POR, using Disney transportation and don't always take mid-day breaks (it's just us two 20-somethings)
 
Nearby you have The Captain's Grille, which is solid, Yachtsman's Steakhouse which is signature, or Flying Fish, and Trattoria Al Forno on the Boardwalk.
Since you are planning to see the early Fantasmic show, I would not stray too far from DHS or book a buffet, as you may have to wait a long time for tables to turn. Maybe you want to grab ice cream at Ample Hills and book dinner at Boatwright's at your resort, if you are not opposed to a late dinner. Otherwise, I think you would want to book no later than 5:30 so you could wait for a table, eat, and travel back without having to rush!
 
I actually really enjoy the lounge outside of the Hollywood Brown Derby. When are you going? If its during Food and Wine you could hop over and have some snacks. I just don't know if I personally could do a full dinner at 5/530 if my lunch ended around 1:30.
