Potential conference in April -- ADRs?

I'm potentially going to a conference in Orlando (at the Swan) in April ... still anxiously awaiting approval. If I do end up going, a single girlfriend or maybe two, will be going as well, so there will be 2-3 of us. This would be my first time to Disney without the kids so I'm excited to be able to try things like enjoying Epcot, nice restaurants, and late dinners.

We would be free 4/10-4/12 and my conference runs 4/13-4/18, flying back on 4/19. Our initial plan is Epcot on the 11th and MK on the 12th but undecided on what to do the evening of the 10th. My friends would be leaving on the 13th probably but I'll have a couple of evenings through the week, and partial days on the weekend I fly back.

Some of the restaurants I want to try are
Jiko
Flying Fish
Narcoossee's
and maybe Le Cellier

Thoughts?
 
I attended a conference at the Swan a couple of years ago. I went down early so I could spend 3 days in the parks before the conference began. For those days I made 3 ADRs, two at Epcot and 1 in DTD. For the other meals, I did QS. My meals during the conference were all covered so I didn't have to worry about those.

I'd schedule a few ADRs for those restaurants that you've wanted to try but couldn't do with your family or always wanted to try out. I don't like to give recommendations as cuisine is like music; what appeals to me may not appeal to you. But your proposed choices look pretty good, so go for it.
