Potatoes, So Many Potatoes!

So, we're rice people but in a fit of "frugality" I bought a 15 pound of russet potatoes at Sam's.

I'm looking for main dishes that feature potatoes. I'm pretty open but would prefer:
-no cans of "cream of" type soups
-lower fat (Most recipes I find call for copious amounts of bacon or cheese.)
-spices/international flavore very welcome

Right now I have a a potato/veggie/sausage skillet and a baked potato bar in my repertoire. I also bought 15 pounds of 90% lean ground beef so if anyone has a good, lower fat recipe for combining potatoes and ground beef I'd love to hear it.

We love chili with baked potatoes - uses a bit of cheese on top but very healthy.
I know you said main dishes, but just because it's my favorite potato side I'll mention it. I cut the potatoes up into maybe 1" chunks, toss with a little oil, and use my FAV seasoning - McCormick grill mates seasoning, the smokehouse maple flavor. Gives them a nice bacon flavor without the calories, and a hint of sweet. We can eat them for dinner with any meat (often with roasted chicken) and even for breakfast with eggs.
Maybe you can make a Shepard pie? Add the veggies and whatever makes the gravy, potato layer on top.

Corn chowder, or any kind of chowder, is a great way to use potatoes and make your soup more filling.
Maybe breakfast for dinner with hash browns/ home fries.
I love potatoes in any form, so this sounds like an awesome challenge to me :)
 
Shepard's Pie, Latkes, or Guinness Beef Stew would be my go-tos if you want to avoid the fats/cheese.

For beef stew, use the crock, get a low end beef, cut it (and trim fat if desired - I don't, but then again, I don't buy any beef with a large fat strip), dust the beef cubes in salt/pepper and flour, and brown them in a pan with a touch of oil for 2-3 minutes on medium high, toss in the crock, and add in chopped carrots/parsnips/onions/garlic/mushrooms/tons of potatoes (pick what you like) and a Guinness beer (and I use a lot of fresh rosemary and thyme from my garden and more S&P - some use parsley and bay leaves - use the herbs you like). Cook on low about 8 hours and about an hour out, make a cornstarch slurry to thicken to taste and recheck salt and pepper...if you want peas in, toss them in when you do the cornstarch...comes out great!:)

Ignore the recipes that say use 1/2 cup flour (cornstarch works much better and in lower quantity), 1/4 cup veg oil (so overkill) or want tomato stuff or chicken broth - this will shine with the beef and Guinness only...heck, it will also work with cheap, nastier beer (as my husband puts it:))
 
We eat potatoes every day :).

Don't forget you can cut them up, blanch, and freeze them, in essence making your own frozen has browns, american fries, etc, etc. DS used to like those Betty Crocker boxed potato mixes (shudder) until I showed him that he could thin cut and make his own so much easier, and freeze some for next time.

Google for recipies. My mom always made it plain with just peppery ground beef on the bottom and mashed potatoes on top then bake a few minutes til the potato part got crispy.
She just browned the ground beef. Drain off the grease. Put about 1-1.5" of it in the bottom of a casserole dish. Then about equal amounts of mashed potato on top.
Really, you could add whatever you like to the beef/potato but we were never big veggie eaters & still not.
 
Low fat US Senste bean soup. Uses potatoes, white beans and cubed ham. I make my own fat free ham stock whenever I make a ham but you can get a ham stock concentrate at the store which has a half gram of fat per serving. I use "Better Than Buoillon" brand. You can google the recipe. It's kind of famous.

Just use turkey ham and use a little less ham.
 
potato skins. Microwave, cut in half and fill with the french onion Laughing Cow cheese and that is all you need to top it with yum
 
For a quick and easy lunch we make baked potatoes with turkey and gravy. I use turkey from the deli and gravy from McCormick. Low fat, low calorie and lots of potassium.

Scalloped potatoes with ham mixed in. I don't really have a recipe for this, just layer sliced potatoes, sliced onions and ham chunks, then cover about half way with bechamel sauce. Bake at 375 or so until potatoes are fork tender (about an hour, maybe more maybe less depending on thickness of your potatoes, etc)
 
Great timing for this! BJ emailed me a BOGO coupon for bags of potatoes and I was wondering what the heck to do with them if I bought them.

On the combining ground beef and potatoes...I'd do chili and then serve over a baked potato or cut up roasted potatoes. Easy, pretty cheap, and pretty healthy.

And if you want something spicy, I've roasted onions, carrots, potatoes, and whatever other veg I've had and then dumped them into any Indian sauce (Korma, Jalfrezi, Butter Chicken, Tika Masala) and it always tastes good and filling...
 
I cut them in about 1/2 inch cubes, put them in baking dish, toss them in some olive oil, garlic salt, dried onion flakes. 450 for 20-30 min

Also, I make wedge "fries". Wedge the length wise, on the skinnier side (1/4 ince at widest part) toss them with some olive oil and salt, lay them flat on a baking tray (no overlapping), 450 for 20-30 minutes flipping them over half way through.

Other options, potato soup, potatoes au gratin, mashed potatoes, baked potato, etc, etc.
