potato salad

For all you cooks out there !!...(i am not .. so I need simple directions)

Can anyone supply a yummy but simple recipe for potato salad ??

Mine's pretty simple.
Cook potatoes (boil after you have peeled them).I use about 2.5 pounds.
Cool potatoes.
Cut potatoes in small cubes.
Dice up 4 hard boiled eggs (after you have peeled them) add to potatoes.
Dice up some dill pickles and add to potatoes.
Dice up a small onion and add to potatoes (I use a sweet onion or green onions sometimes in season).
Add Miracle whip (or mayo if you prefer). However much to make it moist.
That's it. Family loves it.

My recipe is pretty much like Cathy's with a few changes.

I use bread and butter pickles diced up. Then I take about 1/4 cup of the juice that comes in the bread and butter pickle jar and add it to Hellman's mayo to make a "dressing" of sorts. I also put salt and pepper in the "dressing." I pour this over the potatoes and stir until mixed. I use about 6 potatoes, 4 eggs. About 1 cup of mayo.

I like my potato salad PLAIN. I don't want any tutti-frutti olives or celery or pimentos or weird crap in it. Just detracts from the scrumptuous simplicity of it!

I do mine almost exactly the same as Cathy. But I use Mayo and Sour Cream. I measure by consistancy. I think it comes out to 1/3 cup Sour Cream 2/3 cup Mayo. Oh, I use relish since we keep it on hand.

YUM. I love potato salad.
 

About 2-2.5 lbs boiled potatoes cut up
4 boiled eggs cut up
1/2 green pepper diced
about 1/4 t celery salt
couple dashes pepper
2 T brown mustard
1 T sweet pickle relish
Enough mayo to get it to the consistency that you like
 
Potatoes
Hellman's Mayonaise
Hard Boiled Eggs
Bacon (cooked and crumbled up)
celery (diced very fine)
onions (diced very fine)
parsley (garnish)
Mix it all together and YUMMMM!!!!!
 
This one if from one of my MILs:

Boil 2 to 3 pounds of whole new potatoes (with skins) until fork tender.
Cut into bite size chunks when cool enough to handle.
Let cool completely.
Toss with Hidden Valley Ranch dressing.
Serve.

My mom's (which I love) is not as easy but worth it.

Boil 2-3 pounds of whole regular potatoes with the skins on until fork tender
Cool until they can be handled, but not all the way!
Peel and dice into bite sized pieces wile still warm.
Place in a bowl that has a lid (rubbermaid, tupperware, etc).
Sprinkle gernously with red wine vinegar (mix well to ensure all potatoes get some vinegar)
Seal and let sit over night in the fridge, ocassionally tossing in the bowl so vinegar is absorbed.
THE NEXT DAY:
Cut 1 green bell peppper and 1 red onion into bite sized pieces (not quite a dice)
Slice 2 or 3 hard-bolied eggs
Toss potatoes, bell pepper, onion, and eggs with "enough" mayo.
Refrigerate for at least 2 hours before serving. Enjoy!!

those that contain eggs... can I just skip the eggs???
I have a few picky eaters that will definitely NOT eat eggs... even
in potato salad.

Mine is a lot like Cathy's. We use red potato's, and season with lots of dill, salt and pepper.

You can skip the eggs if you really want to!

As far as mine goes, totally. Half the time I make it I forget to hard boil some eggs.

As far as picky eaters go, my 2 picky eaters love my MIL's recipe. What kid doesn't like ranch :rolleyes: :rolleyes: ?!?
 
This is a yummy and different version of Potato Salad!

So Yummy Baked Potato Salad

3 large baked potatoes, baked the cooled, peeled and cubed
1/2 c. sour cream
1/2 cup mayo
8 slices of bacon, cooked and crumbled (save a little to top salad with)
4 oz. shredded cheddar cheese (save a little to top salad with)
2 green onions, sliced then chopped (Green parts only- save e little to top salad with)
1/2 tsp. pepper
1 dash of celery salt or seasoning salt
1 dash of garlic powder 1 dash of paprika
1 Tbsp. chopped parsely.

Gently stir together ingredients in a large bowl using a large spoon then transfer to a serving dish and top with a little shredded cheddar, green onion and bacon to make a beautiful presentation.

Here's my new favorite recipe ... and so easy:

Spicy Ranch Potato Salad

5 lbs. potatoes
Hidden Valley Spicy Ranch salad dressing
1 packet of Hidden Valley Ranch Dip (the powdered stuff)
Hellman's Mayo (or Miracle Whip, if you prefer that)
1 green pepper, diced
1 red onion, chopped
salt, pepper

Boil potatoes. Peel and cube potatoes when cooled. Add packet of ranch dressing, mayo, spicy ranch salad dressing, salt and pepper to potatoes. Mix well. **I add the mayo and spicy ranch salad dressing a little at a time until I get the consistency I want. I tend to add more spicy ranch salad dressing than mayo, too.* Add red onion and green pepper. Mix well.

Note - I also like to add some spicy pepper to the mix to give it a "zing". It's good that day .. but if you let it sit overnight, it's even better!
 
Sure, you can skip the eggs. ONe of the great things about potato salad. no right way or wrong way. My mom grates her potatoes. I LOVE it that way, but a lot of people think it is mashed potatoes!! LOL. Some people don't like sweet pickles (ME!!) so don't do them or relish, others don't like dill... Your salad, your choice. Totally up to you. Some people leave the onions out (NOT us! we LOVE onions).

I cut my potatoes into chunks before I boil them - that way they cook faster and I don't have to wait on them to cool down to cut them.

I chop up onion, celery and add along with chopped boiled egg and sweet relish. I add a good bit of mustard, then mayo to make it creamy and salt and pepper to taste.
 
karebear1, I just added your recipe to my file! It sounds awesome, and has ingredients that my DDs will actually eat!
 
I hope you like it! But honestly I can't take credit for it.... I got it somewhere a few months ago when I was looking for salad recipes because I was teaching a class about salads. For all I know, I could've gotten it from another Diser! ;) Sure wish I could remember.... oh well- enjoy it.... it really is good!
