Postponing my trip :(

OK, so we wanted to visit Disneyland again in November but for many reasons I just don't think we can, money being the biggest issue. The dollar has dropped to a new low (65c) (we're Australian) and I don't want to cut anything from our trip.
We were planning to visit in November, San Diego for 7-10 nights and then Anaheim for 7 nights. Two Adults and Two kids.

My thinking is that we wait until November 2021 but that is so far away LOL. I don't think I can make it that long HAHA. Also another reason NOT to go then is because my youngest DD will be 3 on Nov 2nd so having to pay admission for her to all the parks we want to visit is a large expense. Would be great to get that extra trip in before she turned 3.

So my question is, if we don't come in November when would the next best time to visit be? My main reason for wanting to go is that in all our trips I've never seen Christmas at a Disney park and I really want to see it, at Disneyland. We've done Halloween every single time so don't want to do that again. In terms of crowds and special things to see and do what would be a good time to visit? Or should we just accept the fact that we need to be there at Christmas-time and "pony up" the extra $1000 odd dollars to pay for our 3yo in Nov 2021?
 
Boo on postponing -- that's no fun at any time of year. But if your main goal is to see Holiday Time at DLR, then you only have two choices: try to squeeze it in before the end of 2020 or pay whatever it costs to see it in 2021. It is what it is, as hard as the choice may be. However, for other times to visit, "special" times bring crowds, as you've seen with Halloween Time. So why not try visiting during summer? That would be a very nice weather break for you. And peak season at DLR means longer hours, more staffing, no/few refurbs, more entertainment, nighttime entertainment every night (so scheduling for you can be easier), etc. When the parks are prepared and ready for the crowds, things run surprisingly smoothly and you don't feel the crowds as much when there s a lot going on to spread them out. Book early and you might find some very good rates. Since you're visiting from so far away, it can be such a headache to play the guessing game with dates, weather, crowds, hours, refurbs, entertainment schedules, etc. And what if you're wrong? At least with peak summer, you know just about everything should be up and running and there shouldn't be any bad weather!
