Some stay at the Hyatt MCO. Others head for a WDW resort. Still others head out for a hotel at the port. And some stay at a hotel close to the airport.

It varies.
 
Its all personal preference. We typically stay at the CIS near the port, as we get a port view room, and it includes breakfast and transport to and from the port. Well also go eat at Rustys Grills or Fishlips, which are on the water and watch the ships go by. Some prefer the Residence Inn or Radsion or one of the other nearby resorts for 1 reason or another, and still others will stay at the airport, for convenience to the DCL busses based on what time their flight comes in. Its really all preference and how much of a budget you are on.
 
Our first cruise we made ressies at the Hilton because we had a late flight and were traveling with my mid 80s mom and aunt. Turns out that was a great decision since we had a ground stop at DFW because of lightning and didn't get into MCO until 1:00 AM. DCL transport worked great for that one. The second one we rented a van, collected everyone from the airport and DS and DIL from Animal Kingdom Lodge and stayed somewhere near the port. Don't remember where and we wouldn't stay at that place again anyway. The next morning we drove to the port, unloaded everyone and DH returned the van and was shuttled to port. I would say it's pretty much your choice depending on how you get to PC (fly or drive) and what time you want to board the ship. An early PAT won't do you any good if you take Disney transport.
 

We stayed at Homewood Suites and it was very nice. Just DON'T take the shuttle. They share service with the Carnival ships and it took FOREVER to get to the port. If you need a shuttle service, use Uber instead.
 
We stay at the Country Inn and Suites nearest to the port. Ask for a port side window (well in advance) so that the kids can see the ship early in the morning from the hotel room window. Breakfast is alright. It's the usual free breakfast fare. The hotel is clean and the staff is very friendly.
 
We usually have a car so we like to stay in cocoa beach right on the beach. We've stayed at the la Quinta and the Hampton Inn. Both were great and very reasonable priced for hotels on the beach.

Do you mean the Airport Hyatt or a Hilton off airport property?

We always stay at the Residence Inn. They have 1BR rooms that allow us to relax while DS sleeps next door, the wifi is fast and steady, the breakfast is very good and included, it is 5 min to the port by taxi and, if we need to drop off a rental car, Hertz is right in the parking lot. If you are a Marriott member, the member rate is the lowest you can find.

We prefer to wake up late, play some card games on the terrasse outside while having coffee and be early at the terminal than to drive in the morning.

Radisson at the Port for us. Fishlips the night before for dinner. A cab from the Radisson to the terminal will run about $12...same as the hotel shuttle for two.
