Can someone give me an intro to "pool hopping" and which resorts have the best pools for little kids?

Pool hopping is not allowed unless you're staying on points. You are supposed to show your Key to the World card when going into a pool area, although this is not always enforced. (I've had it about 2/3rds of the time when I go). But I wouldn't risk it unless you are on points. And you need to check in at the front desk to make sure that they're "participating".
 
Pool Hopping Information from Portable Perks----direct quote (as best as I can type!)

You and any guests staying with you at Old Key West, BoardWalk, Wilderness Lodge, Beach Club, Saratoga Springs, or Animal Kingdom Villas, or Vero Beach are permitted to use other DVC and WDW resort hotel pools (in addition to the pool at the hotel at which you're staying) if they are not at capacity. If the pool you're visiting reaches capacity, you may be asked to leave in order to accommodate guests of that hotel. Please check with a host/hostess at the front desk of the resort you wish to visit to find out about pool-access availability. You must present your current "Key to the World" card with the DVC Member designation on it to use other resort hotel pools.

Pool hopping is not available at Uzima Pool at Animal Kingdom Lodge and Stormalong Bay and the leisure pools at the Yacht & Beach Club. There are no exceptions to this policy.

As a reminder, during times of high occupancy, please be mindful of the limited number of pool chairs available, and refrain from leaving towels/personal items on unoccupied pool chairs.

Due to expected high occupancy, DVC Members may not "pool hop" February 15-21, 2009, April 4-18, 2009, May 22-25, 2009, and June 28-July 5, 2009. (Other restricted dates may be added based on projected pool capacity.)

We asked Concierge at the BC in June (we were staying at BCV) about pool hopping and they gave us the Portable Perks book, we were also told that pool hopping was not allowed at either of the AK pools not just Uzima. They thought it was funny we asked about going somewhere else because usually everyone asks about coming to SAB. We were going to spend the day at DTD and thought about stopping at SSR to check out the main pool. I almost forgot they said that BLT pool would also be designated as a 'no hopping' allowed pool.

We were at our home resort, the BWV, this past April. We hopped to the Poly pool after a fabulous breakfast at Kona. It was our very first pool hop! Wow what a terrific pool for the kids. The zero entry was great. I would highly recommend this one if you have young children. Noone ever asked us for ID but I did stop at the desk when we were in the lobby to let them know we were there.
 
My DD has always wanted to swim at coronado springs..she loves the look of the pyramid! Maybe we'll stop by there!

My family love SSR, the main pool has a zero entry area. there is also a little splash pad just off to the right of the pool. The slide is great, though maybe too big if the kids are real little. The pool at the grandstand also has a fun splash area. The locker rooms are located in the bottom level of the spa. There is an outside entrance located just off the main pool area. So we swim, change and take the boat to downtown disney.
