Please share any good freeze ahead chicken recipes.

I thought I might get organised (at 47 you'd have thought I'd have realised that's one thing I'll never be:rotfl:) and freeze some casseroles. I've got into a rut of using jars/tins of sauces so if you've got any foolproof chicken (or turkey) recipes please share them.
 
I have been trying to do the same, I have been using my slowcooker alot as it is a large one I have been making double batches of everything and freezing some - one of our favourites is Coq au Vin - 1 bottle of red wine makes a double batch, a single batch would be
4 chicken breast
2 onions
225g mushrooms, sliced
1/2 bottle red wine
2 tablespoons plain flour
(I have also added other things like carrots, celery, bacon if I have any that need using up)
fry the onions for about 5 mins, sprinkle over the flour and mix and slowly add the wine (do it slowly or it will get lumpy) when all the wine is added, stir well. Put chicken in slow cooker and add mushrooms and other veg if wanted pour over wine mixture and cook on high for 4 hours low 5/6 hours. You could cook in the oven I would say 1 1/2 hours at 180C would be about right.
