Please help with Low Sodium Diet!!!

I was recently put on a Low Sodium diet by my cardiologist. I have already made my dining reservations, so what is the best way to notify WDW about my dietary requirements. What do I do about counter service meals? Is there a way to request low sodium or is there someone to tell me the best menu options? I don't want to be stuck eating salad all week and WDW counter service salads are kind of yucky! Thanks
